Parmigiano Reggiano Vacche Rosse is made with a special milk. The milk of the red cows of the Reggiana breed is special because it comes from animals fed only on grass, hay and flowers. It is a special milk because it is more digestible and richer in nutrients than that of the Friesian breed.

Characteristics
Parmigiano Reggiano Vacche Rosse is made only from milk milked from brown cows of the Reggiana breed. It is a crumbly and grainy cheese, rich in flavor and unique in its kind. Visual examination of the paste reveals the presence of a grainy structure, with a flake-like fracture and tiny holes. Tyrosine crystals appear on the surface of the paste, characteristic elements of proteolysis, the typical process of Parmigiano maturing, primarily responsible for the high digestibility of the cheese.
The color is straw yellow, more intense than that of traditional Parmigiano Reggiano: this characteristic is due to the animals' diet, which includes only grass and hay from the meadows of the Reggio Emilia province, very rich in essences - up to 150 different ones can be counted.
The flavour of Parmigiano Reggiano Vacche Rosse is unmistakable, sweet and characteristic , never spicy, just like the real cheese of the past.

How to enjoy it
Parmigiano Reggiano Vacche Rosse is a cheese suitable for any occasion . You can grate it on your pasta dishes or risottos. You can cut it into flakes and combine it with a few drops of Traditional Balsamic Vinegar of Modena. Ideal with dried plums and dried fruit, you can also cut it into petals to dress your salads.
The recommended wine is a medium-bodied red: a Gutturnio, a Sangiovese or a Chianti Classico are the right choice.
How to store it
Parmigiano Reggiano must be stored at a temperature never exceeding 10°C .
If the vacuum-packed package is intact, you can store the Parmigiano Reggiano tip in the refrigerator for up to 6 months from the packaging date indicated on the label. Once the package is opened, the Parmigiano must be placed in the refrigerator, preferably in the lowest compartments, and consumed within a month. Before placing it in the refrigerator, wrap the cheese in cling film, in a dry cloth, in a linen bag, or use a glass or plastic container. Remember to clean the rind often to prevent the formation of mold.
