Lambrusco is the symbolic wine of Emilia-Romagna, one of the oldest and most distinctive varieties of the Italian wine scene. Originating from wild plants domesticated over 2,000 years ago, Lambrusco comes in dozens of varieties, each with unique characteristics.
In Parma, Lambrusco Maestri is the most widely grown, with its dark color, dense, creamy foam, and notes of dark fruit, spices, and a marked sugary residue. In Reggio Emilia, however, the Grasparossa and Salamino varieties are more widespread, with dark tones and a less sugary but drier taste, with hints of red fruit and flowers. The most distinctive variety in Modena is Sorbara, the lightest, finest, driest, and most mineral Lambrusco, with notes of citrus and incense.

The name derives from the typical shape of the bunch which is long and cylindrical, resembling a small salami.

Brief maceration on the skins for one night, spontaneous alcoholic fermentation with its own yeasts and refermentation in the bottle in spring with must from the same grape.
