Pork cheek is a noble cut, perfect for the famous first courses all'amatriciana, carbonara and gricia, but also used crunchy for cream soups, risottos and vegetables. Lard, obtained from the dorsal portion of the pig, is ideal for cooking bases or enjoyed on hot bruschetta. Finally, Pancetta is excellent to enjoy sliced as a cured meat: in the kitchen, it is ideal in vegetable pies, with potatoes or to flavor meat. A cured meat that cannot be missing from a good home-made dish.
