Characteristics
Parmigiano Reggiano made exclusively from Bruna is sweeter, more aromatic and delicate on the palate than traditional Parmigiano Reggiano.
The colour of the cheese is a deep straw yellow, the characteristic shade of the animals' diet based on hay of different qualities.
On the nose, this Parmigiano evokes aromas of cream, butter, grass and fruit . On the palate, it recalls the essences of cooked fruit and vegetables, with some light hints of almond. Soluble, balanced and crumbly at the right point, in the mouth it is persistent, but not too much.
Parmigiano Reggiano is a food suitable for people intolerant to cow's milk proteins, it is lactose-free and has a lower fat content than most other cheeses.
It is a healthy, light, tasty food, ideal for children, the elderly and for those who practice sports.
Nutritional values
Parmigiano Reggiano made only with Bruna is made with milk rich in proteins , in particular the B variant of K-casein, a nutrient that guarantees better incorporation of the fat and proteins of the cheese and a greater presence of calcium and phosphorus.
How to enjoy it
You can enjoy it alone, cut into flakes. Or you can serve it with an aperitif , as a snack or with some slices of bread. This Parmigiano also goes well with jams, mustards and dried fruit , such as melons, grapes and figs.
You can grate it on pasta dishes, soups and risottos, with vegetables and fresh seasonal salads.
How to store it
Parmigiano Reggiano must be stored at a temperature never exceeding 10°C .
If the vacuum-packed package is intact, you can store the Parmigiano Reggiano tip in the refrigerator for up to 6 months from the packaging date indicated on the label. Once the package is opened, the Parmigiano must be placed in the refrigerator, preferably in the lowest compartments, and consumed within a month. Before placing it in the refrigerator, wrap the cheese in cling film, in a dry cloth, in a linen bag, or use a glass or plastic container. Remember to clean the rind often to prevent the formation of mold.
