Why Gold:
The gold series is made with fish that arrive from the fishing ports of Cantabria, in the spring months, selected according to size and freshness; after being treated with sea salt, they mature from 6 to 10 months before being immersed in high quality oil.
Anchovies caught during the night are chosen; the curing and preservation process maintains the very high Codesa standards. The fillets are uniform and meaty.
