An ancient variety of apple typical of the Oltrepò area is used, small in size, with a characteristic red-green color and firm and slightly sour pulp. The astringency of this apple goes well with fatty meats such as boiled meats and sausages, as well as being recommended with mature cheeses. It is the symbol of Mantovana mustard, as it is an ingredient in the classic pumpkin tortelli.
