As tradition dictates, there is no water among the ingredients: durum wheat semolina and 32% chicken eggs. The pasta, which is born strictly long, is dried slowly, hung and worked with a few steps, to ensure the maximum yield of the pasta during cooking. From the dough to the finished product there are 2 ingredients, 6 phases and a maximum of 48 hours of waiting.
