The olives used to produce this oil are harvested on hills between 30 and 200 metres above sea level.
Produced with Ogliarola salentina, Leccino, Coratina and Frantoio olives, harvested from centuries-old olive trees.
Perfect for seasoning fish carpaccio, steamed legumes and vegetables, white rock fish soups, gratinated shellfish, stewed fish and roast white meats.
