The real Salame Felino PGI is made with a mixture of minced lean and fatty parts of the pig, appropriately dosed, flavoured and stuffed into natural casing.
Its tender meat and the absence of artificial flavourings and preservatives make it a genuine and delicious product. Aged 70-80 days in cellars without forced ventilation, the product must be sliced into long transversal slices, as thick as a peppercorn.
