Mariola is one of the most prestigious salamis in the area. It is a product with a long aging process, made possible by its characteristic large size and the use of natural pig intestines for stuffing. The high quality of Mariola comes from the use of the intestine (each pig has only one) to which it owes its name (the intestine is actually called "mariola") and from the selection of the most precious part of the pig's meat, obtained from the trimming of Culatello, to which pieces of coppa and shoulder are added to aid in the prolonged aging process. Once ground, the meat is seasoned with salt and pepper, then stuffed into the intestine and left to age in a natural cellar for over 4 months. Despite the long aging process, the large diameter of Mariola allows the meat to remain soft inside, while the formation of mold on the outside of the product gives the salami its typical aroma of a natural cellar. Historically, two versions were available, cooked and raw: the Mariola produced by Podere Cadassa is the raw version, the most precious type, traditionally reserved only for noble families.
