Ferrando di Quarticello is a naturally sparkling rosé obtained from the Lambrusco Salamino variety, one of the most widely planted in the area.
The name derives from the typical shape of the bunch which is long and cylindrical, resembling a small salami.
Brief maceration on the skins for one night, spontaneous alcoholic fermentation with its own yeasts and refermentation in the bottle in spring with must from the same grape.
