Milk from sheep farmed in Sardinia. Entirely handmade, just like in the past. A slow maturation confers this cheese its unmistakable slightly spicy flavor, exclusive to but a few hard cheeses. The Sardinian "istagionadu" Pecorino is a typical table cheese, it can be served alone or grated onto pasta. It varies from white to straw yellow in color, depending on its maturity and the more aged the more granular its consistency. It has a pleasantly spicy flavor, it stimulates the palate, ultimately exploding in a triumph of aromas.
